Southern Sausage Balls

Usually we try to share somewhat healthy options when sharing a recipe in the newsletter but in honor of the theme, holiday traditions, I thought I’d share my own family’s recipe. Every year the family gathers together on the first weekend of December, cleans their hands, and prepares to spend a bit of time rolling. While this might be a more time intensive recipe when it comes to prep, that’s what makes it a great holiday tradition! I have vivid memories of my MawMaw in the kitchen mixing up the next batch of sausage mixture while the great grandkids sat in the living room, rolling ball after ball while watching old Claymation movies. It’s a great time to spend together and collaborate as a family on something that can be enjoyed throughout the month!

Ingredients

  • 2 cups Bisquick
  • 4 cup shredded cheddar cheese
  • 1 pound ground sausage
  • 1/4 cup milk or water

Directions

1. Start with putting the Bisquick in a bowl then break up the sausage into the bowl using clean hands or a fork. If possible, mix while adding sausage.

2. Add the shredded cheese a little at a time while mixing to achieve an even mix.

3. Add your liquid a little at a time until mixture is at a consistency that is sticky enough to stick together without sticking to your hands. If mixture becomes too sticky, add a few teaspoons of Bisquick.

4. Form balls using a spoon or cookie scoop and give them an additional roll around with your hands to make sure the ball is tightly packed together. If mixture is still too sticky, you can dust your hands with flour between balls.


5. If baking immediately, place the balls on a cookie sheet lined with parchment paper or sprayed aluminum foil. Make sure the balls are far enough apart that they don’t touch. Bake in the oven at 375 for 15-20 minutes, flipping them over at 10 minutes.

6. If saving for later, place the balls on a cookie sheet and place the cookie sheet in the freezer for about 1-2 hours. You can then pop the balls off the sheet and put them in a zip-lock back. Follow step 5 for baking instructions when ready to eat, no thawing necessary!

Enjoy with your favorite condiments from savory options like gravy or mustard to sweet like raspberry jam!

Alterations

This is a recipe that can be easily modified and made your own! Try out different cheese combinations, we always like doing a half and half of cheddar and pepper jack. Or try out different meats like ground turkey or chicken.
